Preheat your oven to 160°C (320°F).
In a small bowl, combine the softened butter with minced garlic and salt until well mixed.
Slice the bread loaf in half horizontally to create two long, open-faced pieces.
Spread the garlic butter mixture generously and evenly over the cut sides of the bread, making sure to cover the edges.
Place the bread on a baking sheet and bake for 20 minutes until the bread is golden and crispy on the edges.
Increase the oven temperature to 200°C (390°F). Top the bread with the grated mozzarella cheese and bake for another 7 to 10 minutes until the cheese is melted, bubbly, and slightly browned.
Sprinkle with fresh parsley if desired, then cut into thick slices. Serve immediately while hot and gooey.
