
These tender chicken skewers are marinated in a zesty lemon and spiced yogurt sauce, then grilled to perfection. Served in warm flatbreads with fresh salad, they make a healthy and flavorful meal that's perfect for a quick dinner or a summer barbecue.
Prepare the marinade: Finely chop half of the mint leaves. In a large mixing bowl, combine the chopped mint, natural yogurt, half of the lemon juice, all of the lemon zest, ground cumin, ground coriander, and grated ginger. Season the mixture generously with salt and plenty of black pepper.
Marinate the chicken: Add the chicken breast pieces to the yogurt mixture and toss until every piece is evenly coated. Cover and refrigerate for 20 to 30 minutes. If you are using wooden skewers, soak them in water for at least 20 minutes during this time to prevent them from burning on the grill.
Grill the skewers: Preheat your grill (broiler) to a medium heat and line a grill tray with foil for easy cleanup. Thread the marinated chicken pieces onto the soaked wooden or metal skewers. Grill for 15 to 20 minutes, turning the skewers halfway through, until the chicken is nicely browned and cooked through.
Assemble and serve: Briefly warm the flatbreads under the grill for a few seconds. Top each bread with sliced lettuce, the grilled chicken skewers, sliced red onion, the remaining mint leaves, and a final drizzle of the remaining lemon juice. Add optional extras like extra yogurt, pickled cabbage, chili sauce, or hummus as desired.
For extra juiciness, you can substitute the chicken breasts with boneless, skinless chicken thighs. If you have more time, marinating the chicken for up to 2 hours will result in even deeper flavor and more tender meat. Ensure the grill is fully preheated before adding the skewers to get a good sear.
