
Gather all ingredients. Rinse the whole chicken and pat it dry, trimming any excess fat if desired.

Cut the napa cabbage into large pieces. Slice the apple and onion into wedges. Soak the dried cordyceps mushrooms, dried maitake mushrooms, and red dates in cold water for 30 minutes, then rinse well and drain.

Place the onion, apple, and napa cabbage in the bottom of a large heavy pot. Set the whole chicken on top, then arrange the ginger, garlic, soaked mushrooms, and red dates around it. Sprinkle with salt.


Cover tightly and cook over low heat for 1 hour without lifting the lid. Add the goji berries, cover again, and continue cooking for another 30 minutes, until the chicken is tender and the broth is fragrant.

Taste the broth and adjust the salt as needed. Serve the chicken with the vegetables, mushrooms, dates, and hot herbal broth.
