
Gather all of the ingredients. If needed, clean the chicken and pat it dry before cooking.

Cut the napa cabbage into large pieces. Slice the apple and onion. Soak the dried red dates and mushrooms in cold water for 30 minutes, then rinse and drain well.

Layer the onion, apple, and napa cabbage in the bottom of a large pot. Place the whole chicken on top, then add the ginger, garlic, soaked mushrooms, and red dates around it. Season with 1/2 to 1 teaspoon salt.


Cover the pot with a tight-fitting lid and cook over low heat for 1 hour without opening the lid. Add the goji berries, cover again, and continue cooking for 30 minutes more, or until the chicken is fully cooked and tender.

Taste the broth and adjust the seasoning with more salt if needed. Serve hot with chicken, vegetables, and broth in each bowl.
