Let the pizza dough come to room temperature and rise slightly on the counter according to package directions. Meanwhile, preheat the oven to 450 F. Cut the smoked salmon into bite-size pieces, thaw and peel the shrimp if needed, then slice each shrimp in half lengthwise. If the scallops are large, slice them into 2 to 3 thinner pieces so they cook evenly.

Stretch or roll the dough into a round or rectangle and place it on a parchment-lined pizza pan or baking sheet. Brush a thin, even layer of pesto over the surface, leaving a small border around the edges.

Arrange the shrimp, salmon, and scallops over the pesto. Scatter the capers on top, then finish with an even layer of shredded cheddar cheese.

Bake for 12 to 17 minutes, or until the crust is golden, the cheese is melted, and the seafood is cooked through. Remove from the oven, let the pizza rest for 2 minutes, then slice and serve. Add grated Parmesan or crushed red pepper flakes if desired.
