
This microwave vegetarian mug lasagne is a fast, satisfying single-serve meal layered with tender vegetables, tomato sauce, creamy ricotta, and melted mozzarella. It delivers all the cozy flavor of classic lasagne in just minutes, with hardly any cleanup.
In a small bowl, mix the ricotta with the crushed garlic and a generous pinch of salt and black pepper until smooth.
Add the frozen Mediterranean vegetables and pasta sauce to a large microwave-safe mug or ramekin. Cover loosely and microwave on high for 3 minutes, or until the vegetables are hot and tender. Stir, taste, and season if needed, then mix in half of the chopped basil.
Spoon about two-thirds of the vegetable mixture into a bowl, leaving a little in the base of the mug. Top with half of a lasagne sheet, breaking it to fit if needed. Add half of the reserved vegetable mixture, another piece of lasagne sheet, and half of the ricotta mixture.
Repeat the layers with the remaining vegetables, lasagne sheet, and ricotta, then finish with the mozzarella on top. Microwave on high for 2 minutes, or until the pasta is tender and the cheese has melted. Let it stand for 1 minute, then scatter over the remaining basil and a little black pepper before serving.
Use a large mug or ramekin to prevent bubbling over in the microwave. If fresh lasagne sheets are unavailable, use dried lasagne broken into small pieces and add a splash of water to help it soften. This dish is best eaten right away, but leftovers can be covered and refrigerated for up to 1 day.
