This bright Shirazi salad is a refreshing mix of juicy tomatoes, crisp cucumber, red onion, and sweet pomegranate seeds tossed in a simple lime dressing. It is quick to prepare, full of fresh flavor, and perfect alongside grilled meats, rice dishes, or as a light starter.
Place the diced cucumber, chopped tomatoes, finely chopped red onion, and pomegranate seeds in a large mixing bowl.
Season to taste with salt and black pepper. Add the lime juice and extra-virgin olive oil, then toss gently until everything is evenly coated. Transfer to a serving bowl and serve right away.
For the best texture, use ripe but firm tomatoes and avoid overmixing. You can chill the salad for 10 to 15 minutes before serving if you prefer it extra cold, but it is best eaten fresh. Store leftovers in an airtight container in the fridge for up to 1 day.
