Cool down with these refreshing homemade strawberry ice lollies made with fresh fruit and creamy yogurt. A healthy, kid-friendly summer treat that is much better than store-bought versions!
Place the hulled and chopped strawberries into a blender, food processor, or smoothie maker. Blitz until the fruit is completely puréed.
Add the natural yogurt to the blender and blitz again until the mixture is smooth and well combined.
Taste the mixture for sweetness. Depending on the ripeness of the berries, stir in the caster sugar or honey as needed to suit your personal preference.
Pour the mixture evenly into a six-hole ice lolly mould, filling each hole to the brim. Insert the lolly sticks.
Place the mould in the freezer for at least 4 hours, or until the lollies are frozen solid. These will keep well in the freezer for up to one month.
To easily remove the lollies from the mould, dip the outside of the mould in warm water for a few seconds before pulling the sticks. For a dairy-free version, you can substitute the natural yogurt with coconut yogurt.
